After months of hard work it's really all coming together.Today I have both sweet and savoury recipes and recipe videos to share with you that I've created for Vivapura's blog. I love playing with their ingredients. And by the way, you get FREE shipping on orders over $75.I made this raw vegan Maca Chocolate Chip Ice Cream a few weeks ago. It's SOOO good! And with all the benefits of maca (some of which I share HERE), it's basically a medicinal ice cream. How about that?!Maca Chocolate Chip Ice Cream1 1/3 cup cashews2 1/2 cups water2/3 cup + 2 tablespoons coconut sugar4 tablespoons maca3 tablespoons lucuma2 teaspoons mesquite2 teaspoons baobab powder1 tablespoon maple syrup-----1/3 cup cacao nibsBlend the cashews, water, and sugar until smooth. Add remaining ingredients except the nibs and blend to incorporate. The mixture should be completely smooth. Chill in the fridge for 8-12 hours and then process in an ice cream maker according to the manufacturers instructions. Toward the end of churning add in the cacao nibs OR raw dark chocolate chunks. Freeze for 4-6 hours until the ice cream firms up.Raw Zucchini AlfredoI made added a few extra goodies to this alfredo to kick it up a notch! Valentines Chewy Chocolate Squares and Chocolate Maca Cups
Happy Valentines Day (almost)! Have you been busy making healthy raw chocolate treats to celebrate the occasion? I'd love to hear about what you made. Do you have special plans for the 14th with your loved one?I have two awesome recipes to share with you today, both involving chocolate of course ;)First Chewy Raw Chocolate Squares is a recipe I posted last summer and have made them several times since. They're only sweetened with dates and are rich and delicious.Chewy Chocolate SquaresCrust1 1/4 cup almond flour*3 tablespoons coconut flour1/2 cup pitted dates, chopped**2 teaspoons water, or as neededCombine the flours and dates in a food processor until ground down. Add water starting with 1 teaspoon. Pulse to combine. Add the second teaspoon if needed so that the mixture holds together when pressed. *Either blanched almond flour (which is what I used) or finely ground almonds (sift to get out the leftover chunks)**Measure 1/2 cup pitted and then chop.Topping1 1/2 cup well packed, pitted dates1/2 cup coconut milk9-10 tablespoons cacao powder1/4 teaspoon vanilla bean powder (what I used) or 1 teaspoon pure vanilla extract1/8 teaspoon salt1/4 cup melted coconut oilPuree the dates in a food processor (may have to scrape down a few times). Add the coconut oil, cacao, vanilla and salt. Puree again until smooth. Once the mixture is completely smooth (takes a few minutes), add the oil and process until its incorporated. Spread the mixture over the crust. Chill in the fridge for 8-12 hours or in the freezer for 4-6 hours. Drizzle raw chocolate and coconut flakes on top (after chilling). Slice into bars. *Full fat canned or fresh young coconut pulp blended with water = must be thick. OR thick cashew milk.My next recipe is one I wrote for Vivapura's blog (I love being their official new blogger - and FYI: you always get FREE shipping on orders over $75)!
